The New Mexico restaurant is located in the heart of Leuven, in a culinary pedestrian street which really comes to life in summer when it fills up with sidewalk cafés. The owners, Renate Cardyn and Peter Thyssen studied in Leuven and, at the time, made some extra money working as a waiter and an assistant cook in various restaurants. It awakened their interest in opening a restaurant of their own. |

However, they wanted it to be something different than an ordinary restaurant: it had to be original, exotic or foreign, but still affordable. They immersed themselves in Mexican cookbooks and travelled to Mexico in search of the ins and outs of Mexican cooking. After a few trips to Mexico, they opened their own Mexican restaurant in Leuven. |
